Spinach and Artichoke Dip

Here’s a Great recipe for any party

2 pounds cream cheese

1/2 pound parmesan cheese

1/2 pound fontina cheese shredded

2 eggs

1 pound spinach blanched and squeezed dry

1/4 white onion finely diced

2 Tablespoons butter

2 cloves garlic

1 small can artichoke hearts (or 5 fresh artichokes hearts if available)

salt and pepper to taste

seasoned breadcrumbs

3 Tablespoons melted butter

Method: Preheat oven to 350 degrees farenheit

in a bowl combine parmesan, cream cheese and eggs and whip to blend, fold in Fontina.

heat a skillet over medium high heat and add butter, when butter is melted add onions and cook until translucent. about five minutes (be sure not to burn them so continue stirring) when onions are finished add chopped garlic and remove from heat after 30 seconds.  chop finely the spinach and artichokes and add to pan.  toss with salt and pepper then add to the cheese mixture while hot.  fold until all ingredients are well incorporated.  transfer to a glass or ceramic baking dish and bake for 15 minutes and add breadcrumbs that have been tossed in butter bake for another 3 minutes on broil.

serve with toasted pita points or anything else you like to dip into spinach and artichoke dip

So I made this over the weekend and brought it to a party — and it was a HIT!!! DELICIOUS!!!

And everyone else thought so too! :)

(I did cut the recipe down to one package of cream cheese and other relative portions).
